Book Condition: Very Good; bumping to tail and upper front tip; small stain at tail; splash stain to bottom of rear board. DJ: Good +; this DJ was stored in the book folded into quarters; missing small pieces at head, tail, and tips; wear to flap folds; light spine toning. Blue cloth boards and spine with bright gilt lettering on the spine and front board. Clean internals. Interior hinges are sound and not split. 179 pp 8vo. There are many food chemistry tests and many cookbooks, but this is the first to combine them. All of the recipes have exact directions for making them, the reasons for each step, and explanations of the chemical changes which occur in the cooking process. This book makes possible an intelligent and efficient approach to cooking. This book is a method; it provides a solid foundation for all culinary accomplishment. Laid-in is an old Morton's Salt note paper 4" x 5 1/4". A clean very presentable copy in a Brodart mylar jacket.
